Portobello Village Show and Braised Tofu Wraps


I'm back home in Edinburgh! It's really nice to be back, not least because I've had so much cat love already. As much as I did enjoy travelling in Brazil, it's been a real relief to finally get back home to my flat and my own space again after nearly two months away.

For my first day back in Scotland, I didn't do very much except wander on down to the Portobello Village Show organised by Portobello Open Door (POD) for the afternoon. This was a lot of fun, and I particularly enjoyed the 'Best Dressed Vegetable' competition, as well as some of the great entries for the 'Recycled Pet' competition:





 

However, perhaps the most unexpected find of the day was Organically Yours, a relatively new Edinburgh-based company specialising in allergy sensitive foods, who advertise themselves as being entirely vegetarian, dairy-free and egg-free, with some gluten-free items. When I spoke to the very nice woman running the stall, Julia, she said to me that everything there was vegan! I bought some 'Happy Pig Vegetarian Spare Ribs' and a 'Better 4 U Vegetarian Burger', which I look forward to cooking and reviewing in another post. My lovely friend Anna also bought some of her gluten-free vegan cakes and let me have a taste, and they were really very good. Apparently they also regularly provide veggie options for The Skylark Café at 243 Portobello High Street too, so I'll be checking that out soon if I can.



As much as I'm looking forward to trying my new veggie burger and spare ribs, this evening when I got home I was feeling pretty knackered and just wanted to put together something quick and simple for my dinner, so I decided to make one of my regular go-to recipes, braised tofu wraps. I love these because they're so straightforward to make, with only a few ingredients, and taste really good!

 

Recipe: Braised Tofu Wraps

 



 Ingredients (for six tortilla wraps):
  • One tin of braised tofu (225g), broken into chunks
  • One medium-sized cucumber, finely chopped
  • Eight spring onions, finely chopped
  • One jar of hoisin stir fry sauce (400g)
  • Six tortillas
  • 1 tablespoon vegetable oil



Method:
Heat the vegetable oil in a frying pan and add the chunks of braised tofu. Cook for 5-10 minutes, turning regularly, until lightly browned on both sides.

Whilst the tofu is cooking, divide the chopped cucumber and spring onions evenly between the tortillas.




Once the tofu is lightly browned, add the hoisin stir fry sauce to the pan, stir well and allow to cook for another few minutes.

Remove the frying pan from the heat and divide the tofu and hoi sin sauce mixture between the tortillas.


Roll up your tortillas into wraps, and you're good to go!
